Cauliflower Crust

ingredients:
2 medium heads cauliflower, about 575g each
2 egg whites beaten
1 tbsp fat free cream cheese
1 oz shredded fat free cheese
1 tbsp nutritional yeast
1 tsp dried oregano
1/2 tsp sea salt and cracked pepper

Directions
Preheat the oven to 400 degrees F. Grate the raw cauliflower in a  food processor or on a hand grater. Steam the cauliflower until tender. You can do this in the microwave in a large glass bowl covered with plastic wrap.  Once its cool enough to handle. Place the steamed cauliflower in a dish towel and ring out all the excess water. (it’s a lot of water!) In a medium bowl, add the rest of the ingredients and mix well. Coat a baking sheet with tin foil and a quick spray of cooking spray. Divide the dough in half and shape into 2 rectagnles about 1/4” thick. You can make the edges a little thicker to mimic the crust. Bake for about 20 minutes until its golden, and is solid enough to move. Transfer to a wire rack, by flipping it over and carefully pulling the foil off.  Place the rack  back on the baking sheet and continue to cook for about 10 more minutes. The wire rack allows air to get all around the crust and to get it nice and crispy.  It is great by itself, or use this as a base for a delicious low carb pizza!
